Deceptively Delicious for Monday Meal Planning




I just got this new book by Jessica Seinfeld from our school book fair. I had tried a recipe from a friend, Steph and really wanted my own. I plan to use this cookbook more and more because me and vegetables don't too much get along (but I'm trying!). Kaelin on the other hand, is a great eater.

I made these muffins this weekend. They're called Applesauce muffins and they have this yummy crunchy, sweet topping made from old fashioned oats and brown sugar (and a little butter or margarine). Inside the muffins there, of course, is applesauce and then the deception!! Pureed carrots!! They are really yummy and I'll share another recipe when I get around to trying some more.

Favorite Homemade Pizza Recipe


My friend Pam is having a Pizza Recipe Posting Party today! Here is my favorite recipe to add to the bunch:

Crust:
Whatever is your favorite. I do mine in the bread maker, buy the garlic herb pizza dough from Trader Joe's, or go with Pillsbury! I throw down cornmeal on the pizza stone before putting the dough on it and I brush the crust with EVOO.

Toppings:
Ragu Pizza Quick sauce
Shredded mozzarella cheese
Chopped grilled chicken breast (I use Oscar Meyer or Louis Rich precooked from the deli meat section)
Feta cheese
Chopped up turkey bacon

Bake at 400 degrees for 12-15 minutes (depends on your oven!) and then sprinkle with oregano and eat! Delicious!

Our First Easter Experience



Kaelin did an Easter Egg Hunt with her cousins yesterday. I didn't think she'd know what to do, but apparently she proved me wrong. She loved picking up the eggs and putting them in her basket! She also loved dumping them all out back onto the grass. Her cousins are older than her (11 and 7) so we had to lay out some rules that included leaving the "easy" eggs out for her to hunt. There's No Place Like Home

With the United States getting "smaller and smaller," it seems like families are getting further and further away from each other. I moved to Georgia from California 7 years ago and met and married my husband here. However, I always pictured myself living and raising a family in my small hometown in Northern California.

I lived a block away from my Grandma and Grandpa and they were my home away from home. Whenever my mom was making something for dinner that I didn't like, I'd call Gram up and see what she was having (while getting the evil eye from my mom). I miss being in a small community where everyone knew and was friendly with each other. I would love my daughter to grow up having a close relationship with my Mom and Dad...hanging out in the evenings, sharing dinners, etc...maybe it'll happen someday! This is a picture of some of the folks from my hometown: Newman, California.

A True Chocoholic




















I've had this problem ever since I was a wee one. I think I got it from my mom. I have chocolate everyday. I don't understand those folks who say, "I don't really care for chocolate." Care for it? How could you not LOVE it! I have to say that in recent years, if I'm just eating straight chocolate candy, I prefer dark chocolate, so I tell myself I'm doing it for my health...the antioxidants, you know. This week, I've been allowing myself 2 Girl Scout Thin Mint cookies after lunch (they're only 40 calories each!). I love chocolate cake, cookies, ice cream...chocolate anything. It's definitely my weakness. Kaelin is already showing the signs as well.

An Innocent Heart Murmur


DH took Kaelin to the doctor last Friday for her 1-year shots. While she was there, the doctor noticed a heart murmur. At first at the mention of the word "heart" I panicked, but only for about 3 seconds. I quickly learned that heart murmurs are very common in children under the age of 15 and do not pose any threat unless they get louder. Our doctor explained it as the heart making an extra noise while it pumped. He said it could disappear tomorrow, or years down the road.

Turkey Burgers made with grill seasoning and whole wheat kaiser rolls

Thursday:
Ground turkey tacos with salsa, light sour cream and cheddar cheese

Friday:
Leftover taco meat made into nachos over Baked Tostitos

Weekend:
Fend for yourself...

I know it's not Cooking Light or Simple Gourmet, but it's real and its food for our family!

Weekend Recap


I really fell off the wagon with blogging since Friday...I had vowed to be posting everyday for at least a week and almost made it! Friday, I got the worst headache. It started with blurred vision and took off from there. I took some tylenol and went to bed. Early in the morning, I woke up with super intense pain. I was afraid that I might need to go to the ER (only been once in 30 years and never want to be there again). It was that bad. It was making me naseous and really nothing was making me feel any better. DH comforted me and that helped. Saturday I pretty much spent the whole day in bed...no fun! I kept thinking about all the time I was missing with DD! We had some extreme weather in Georgia over the weekend and Saturday afternoon, we had some intense hail. My husband got Kaelin and I (we were both napping) out of bed and brought us downstairs because the weather was so bad. Today we just laid low and enjoyed the sunshine. Hope y'all had a great weekend!

Babywearing Giveaway!




I just found out from Andrea about a great giveaway from ModMum. Its a sling in the pattern of your choice from their beautiful collection. I have to say that I love their prints and it was hard to choose which one I'd like best, but I did choose "Emma." I'd love to win this sling, because slingin' is my thang! Its probably my favorite way to babywear. I have very fond memories of using my sling when I was unable to get around well with my DVT...it was a lifesaver. I really want to win! Meal Planning Monday


I would love to do this each week. But unfortunately I usually put off going to the grocery store all weekend because I know that it is going to be crazy busy there and then Monday rolls around and we have nothing to eat. That's what happened today. I came home from work and realized that we didn't have really anything for dinner. So, off I went to the store. This week is going to be a themed week at our house. The theme is "frozen food." The rule is, as long as you're putting something in the stove, oven or microwave, it still counts as cooking! If you have any suggestions for me when it comes to meal planning, please make a comment and help me out!

New Invention: The Gerber Guard



















This week Kaelin found out how to turn the TV on and off without using the remote. At first it was no big deal because she only did it every once in a while. But, Saturday, we were watching a show and she walked up to the TV and proceeded to turn it off, then on, then off, then on...over and over and over again. She would not stop!

So, my husband tried to put a piece of scotch tape over the buttons. "Let's see you try it now, midgie (we call her that sometimes)!" he said. Kaelin looked at him and walked over to the TV and ripped the tape off like it was nothing and then pressed the button on and off again.

Hubby got a little MacGuyver on us then. He took one of the Gerber baby food lids and put it over the buttons and then used mailing tape to tape it firmly in place. Kaelin got it off once, but when he used more tape, she just gave up. So, if you're ever in this situation...remember, try the "Gerber Guard!"

Name of product: Beco Baby Carrier, model Butterfly

Units: About 1,900

Manufacturer: Beco Baby Carrier, of Newport Beach, CA

Hazard: Buckles connecting top of carrier’s body with shoulder straps can suddenly release tension when shoulder straps held near by or by the buckles, causing carrier’s body to shift, posing a fall hazard to the baby.

Incidents/Injuries: The firm has received 10 reports of the webbing slipping thru the shoulder buckles causing carrier’s body to shift. No injuries have been reported.

Description: The recalled infant carriers were sold under brand name “Beco Baby Carrier Butterfly”. Carrier has black label with green logo “b” on left side and picture of butterfly on the right side.
Name of fabrics included in this recall: Mia, Pony Express, Carnival, Addison, Ethan, Sophia, Cameron, Ava, Joshua

A Hands Free Recipe...


Since you're babywearing, your hands are free, right? Isn't it great to NOT have a baby trying to climb up your legs while you're in the kitchen trying to make a healthy meal? I put Kaelin on my back to try to cook (and yes, mommies, putting frozen chicken nuggets in the oven and microwaving corn does count as cooking!). Here is something I tried tonight as an experiment: Barbecue Chicken Nachos. You will need:

2 boneless, skinless chicken breasts
1/2 c. sour cream
1/2 c. salsa
1 c. mild cheddar cheese, shredded
3 Tbsp. barbecue sauce
1/2 packet of taco seasoning
1 bag of tortilla chips (I used the Baked Tostitos)

Cook chicken however you like (I put them in the crock pot with some chicken stock and the taco seasoning). Chop chicken up and toss with barbecue sauce. Pour the tortilla chips into a 9 X13 pan and sprinkle chopped chicken over the top of the chips, next drizzle the salsa and sour cream over the top of the chips and chicken. Lastly, sprinkle the cheese over the top. Bake at 350 degrees for approximately 10 minutes.

This was my kitchen experiment for the day and it was pretty tasty! If you want to get a little more gourmet, check out All Recipes. There are recipes of ALL KINDS! Best Breastfeeding Tips



I have just finished weaning my Dear Daughter, Kaelin. I nursed her for a year and loved every minute of it. I even went through a couple of weeks of "Pumping and Dumping" while I was taking unsafe meds for my blood clot. That was like pouring liquid gold down the drain. When I had to do this, my supply tended to dip a bit. I discovered a website, Daily Strength, that had a Breastfeeding Support Group online (they also have a DVT support group and a whole lot of other groups). In the BFing support group, lots of moms are concerned about their supply and having to supplement with formula. While I wanted to solely breastfeed, it was necessary to occasionally use formula. However, I do have some tips to help nursing moms maximize their supply.

The first tip is to keep yourself hydrated. Water is the best...sorry, Diet Coke doesn't give you the benefit you'll need! Keep your diet high in protein and iron...enjoy cheese and red meat while you can, girls! Wear your baby...keeping your baby close to you will cause your body to make more oxytocin (the breastfeeding hormone). You can get a sling or carrier at Heavenly Hold! You can also try pumping after you nurse. Pumping throughout the day will tell your body that the "baby" wants more milk. Try spending the day in bed with your baby doing nothing but nursing and do it with skin to skin contact (oxytocin, again). Lastly, a yummy way that my neighbor friend and I found to increase our supply, was to make Mama Jeeper's Lactation Bars. The brewer's yeast in them can help your supply. We found brewer's yeast at the local Whole Foods market, or online. Happy nursing!
